As many of you know I’m currently running a 30 Day Wellness Challenge. There is a whole group of us doing it together – sharing ideas, recipes, encouragement etc. I’m excited today to share a new recipe! Dairy free parmesan ‘cheese’. I’ve been using it on so many different things and basically ate the first batch so quickly I couldn’t get a photo to post the recipe so had to wait till I’d made the next batch to share it with you!
Dairy free parmesan ‘cheese’ isn’t really new if you’re a vegan/vegetarian, but it’s new to me and might be to you too. It’s SUPER easy to make, very tasty and works with a variety of meals as a condiment or ‘sprinkle’.
It does involve heading to your local health food store to buy some nutritional yeast (sometimes called savoury yeast). This is the one I’ve used:
- 1 cup (120g) cashews (you can use other nuts)
- ⅓ cup (50g) pepitas
- 1 Tbsp sesame seeds
- 1 cup (65g) nutritional yeast flakes
- 1 tsp ground turmeric
- ½-1 tsp salt
- (you can mix nuts, seeds, you could use chia seeds added in at the end too).
- Place all ingredients in your Thermomix/food processor/blender and process until fine breadcrumbs.
- Store in an airtight container. It doesn't need refrigerating.
You can use this to add to your eggs:
Or to toss through or on a salad:
You can add it to your paleo pizza base and top (this is the next recipe I want to share with you – cauliflower pizza bases with this ‘cheese’).
You can also add it to salad dressings, goes well with chicken, toss through your zoodles or sprinkle on your roasted vegetables.
If you don’t want to make it yourself, I have bought a very tasty version from my local health food store from Soul Satisfaction – they make a great cashew cheese too!
