2 ingredient pancakes with essential oil spiked granola

2 ingredient pancakes

I love this recipe. I’m sure I’ve posted it before, in fact a version is in my cookbook but I had it for breakfast this morning with my latest batch of grain-free muesli/granola so just had to share it with you as a quickie recipe.

2 Ingredient Pancakes

1 banana

1 egg

That’s it!

All you do is mash the banana, whisk the egg and mix them well. Then cook in your frypan with some butter, coconut oil or oil of your choice and top with whatever you like!

You can add in a little protein powder, a tablespoon of almond meal and a little vanilla or cinnamon (or 1 drop doTERRA cinnamon essential oil) but you really don’t have to.

I have served it with the Nudie vanilla coconut yoghurt but would be great with banana nice-cream or cream too.

I pretty much always have a batch of grain-free granola/museli on the go – again a super easy thing to toast up with whatever nuts, seeds and coconut you’ve got on hand. This batch of muesli is flavour pimped with some of my favourite cooking essential oils – ginger, lime, cinnamon bark, cardamom and black pepper (black pepper is needed when using turmeric together with fat to make it bio-available). The other ingredients are coconut flakes, flaekd almonds, walnuts, sunflower seeds, black seeds, goji berries and a few mixed dried fruits, tossed in coconut oil, turmeric and the essential oils baked at 160C for about 10-15mins until golden.
