Food made with friends, family and love

Is there anything better than food made and enjoyed with friends, family & love? It’s certainly ticks many of my boxes! It’s not often I get to cook & eat with my parents as we live 12 hrs drive apart but it’s from my Mum that my love of food & entertaining began.  She’s the ultimate hostess and we were able to entice some good friends of ours & their kids to make the long car journey with us this Easter to spend some time on the farm with Mum & Dad on the outskirts of Orange in country NSW. 

Mum, Anna & I spent much of the weekend in the kitchen (as did Leigh, I should add who cooked a hearty Indian banquet one night and tried out Dad’s smoker to make smoked brisket & pork belly another). After flicking through a cookbook Dad bought Mum for her birthday called Made From Scratch (an Australian Women’s Weekly hardback cookbook), Anna thought we should try the lemon mascarpone ice cream to go with the stewed rhubarb & apple Mum had made. I topped it off with a seed & nut crumble (AKA seed & nut muesli, p 54 in What Annabel Cooks cookbook). If you haven’t bought the book yet you’ll find the recipe here.

 This ‘cream’ was so delicious it would have been perfect even without freezing it, perhaps even better as it tasted a bit sweeter before it was frozen.  A brilliant combo but the consensus was we shouldn’t have halved the sugar in the ice cream as it was a touch too tart, so next time I might try adding a little more than half. I can’t find the recipe online to share but here is a similar one.

Mum stewed the fruit with a bit of coconut sugar.
