Cinnamon & Ginger Granola Clusters

Ingredients
  • 8-10 medjool dates, seeds removed
  • 1.5 cups nuts (I have used both almonds and macadamias)
  • 1.5 cups dessicated coconut
  • 1 Tbsp glucose syrup*
  • 1 Tbsp rice malt syrup
  • 1 Tbsp coconut oil
  • 2-3 drops each of doTERRA ginger, cinnamon & wild orange essential oils
Directions
  1. Preheat oven to 140C (fan forced)
  2. Thermomix:
  3. Place all ingredients in the bowl then pulse 4-5 times. Then mix at speed 5-7 until combined. If the mix is too dry you might need to add a tablespoon of water. I like mine a bit chunky still but if you want it smoother mix for longer.granola clusters
  4. Food processor:
  5. Place all ingredients in the bowl then pulse 4-5 times. Then mix atmedium to high speed until combined. If the mix is too dry you might need to add a tablespoon of water. I like mine a bit chunky still but if you want it smoother mix for longer.
  6. Once the mix is at a consistency were it holds together but isn't too wet, press it onto a lined baking tray.
  7. Bake for 20 mins. Then roughly cut or separate, turn the over off and leave the tray in the oven until the oven is cool so that they have longer to dry out further.
  8. You can mix the clusters with toasted flaked coconut if you want to.
  9. You could cut into bars if you are after more of a muesli bar or break smaller to make more of a muesli.
  10. If you don't have glucose syrup just use 2 Tbsp rice malt syrup. Honey may work too but i haven't tried that yet.
