Lemongrass Pulled Pork

Ingredients
  • 1.5kg pork collarbut
  • 1 lemongrass stalk - outer layer peeled off and use white part only
  • 1-2 garlic cloves
  • juice of 1 lime
  • 2 Tbsp coconut aminos
  • 1 Tbsp fish sauce
  • Juice of 1 apple (about ½ cup)
  • 1 knob of ginger or 2 drops ginger essential oil
  • Optional - give it a boost with 2 drops lime essential oil and 1 drop lemongrass essential oil.
  • (Only use food grade essential oils like doTERRA only)
Directions
  1. Roughly chop the lemongrass, garlic and ginger.
  2. Place all marinade ingredients in the Thermomix or high speed blender. If you don't have these, finely chop the lemongrass, garlic and ginger then mix with wet ingredients.
  3. Blitz until well chopped and mixed!
  4. Cut the pork into 3-4 'steaks'.
  5. Place all ingredients in the pressure cooker and cook on high for 1 hour. You can also slow cook the pork in a slow cooker or oven if you don't have a pressure cooker. Should take roughly 5-6 hours in a slow cooker on high or at 150C/300F in the oven (covered).
  6. Pull apart the pork with a couple of forks and serve as you wish. Goes really well with a coleslaw type salad, in tacos (lettuce or corn, but not corn for 30 Day Challenge), on cauliflower rice or with mashed sweet potato and veg.
