About Annabel

Hi, I’m Annabel from What Annabel Cooks!

I love food, I love people and I am passionate about health.  I take an holistic approach to my own health including food/lifestyle/essential oils and medication and am passionate about inspiring wellness for others too. I have Hashimoto’s an auto-immune thyroid disease that has taken me down this path.  I’m a firm believer in prevention is better than cure so love talking all things health and wellness. That’s what you’ll find on this website – lots of healthy and yummy food, information about therapeutic essential oils (they have revolutionised my thyroid health) and my take on various lifestyle issues too.

My recipes here on What Annabel Cooks are mostly paleo & at bare minimum gluten free. I personally have tried a variety of styles of paleo & what works for my body.  As a general rule I’m best without all grains but am ok with a bit of dairy. My biggest battle is with my sweet tooth… this is an ongoing battle of which I go through seasons of conquering it better than others! I have also done periods of time following the strict Auto-immune Protocol (AIP) for my Hashimoto’s so some of the recipes are AIP compliant.

I love cooking for other people (apart from my kids who don’t appreciate it, although I’m hoping one day they might) and sharing that food and conversation with them.  I’m so grateful for a husband who often says ‘it’s like eating in a restaurant every night’ about my cooking  🙂  I’m so incredibly grateful for growing up in family where my Mum & Dad loved to cook and who still are really the quintessential entertainers.

I have been using doTERRA essential oils since April 2016 and they have had a profound impact on my health to the extent that for the first time in 20 years I have been able to consistently reduce my medication and I’m hoping one day in the not to distant future I’ll not be on any! Watch this space.  I still eat clean, regularly see my doctor and naturopath and am conscious of reducing stress and lifestyle issues but the most significant  change has come since incorporating essential oils into my lifestyle. I have a husband who is happy to come along for the ride of my food/health journey and 3 beautiful boys who are more resistant companions but very slowly over time I’m chipping away helping them to embrace healthier eating and lifestyle.

I’ve got a law degree and have worked as a lawyer, a life coach and as a mediator for separated families.

    I’m in for 2014. My family is not going to know what’s hit them. I need to eat Gluten Free & drink Lactose Free Milk (still hard to say no to icecream and chocolate. I’m working on it!! Feb Fast starts soon. Diet Coke & Chocolate in one hit. ARGHH. I need al lot of help Annabel, so you might get some silly questions. I’m off FB, so I’ll just receive your emails. Now, if you can only tell me what to put in the boys lunchboxes for Wednesday I would really appreciate it. Love Kirst

    Hi Kirsty, no problems, feel free to email, no questions are silly!! First few days are often the hardest while your body detoxes. As for school lunches, I hate making them. My kids tend to get ham & cheese sandwiches, fruit (often returned) and some kind of snack (eg hot cross bun). You can see that they aren’t GF or anything free!!

      Hi Cath, yes it’s exactly the same. The Snack ebook is a bit different (free if you subscribe to my newsletter) but the ebook for $9.95 is the full print book in PDF version. Annabel
