Hi my name is Annabel.
20 years ago I was diagnosed with Hashimoto’s disease, which is an auto-immune under active thyroid condition.
Looking back, I suspect I have had thyroid problems since I was about 13 years old even though it wasn’t picked up until I was 22.
I was initially told by my doctor all I had to do was to pop a pill every day for the rest of my life. It’s never that simple!
I have always battled with my weight, so I just grew up thinking I ate too much and didn’t do enough exercise. I spent about 20 years of my life on a diet, exercising (often slogging it out at the gym in the early hours of the morning) to no avail. A few kilos here and there but nothing significant or long lasting.
I realise now that I was fighting an undiagnosed condition and then a poorly managed one until my early 30s.
I have now learnt that to give my body the best chance of being healthy I needed to reduce inflammation in my body, which I can do by eliminating gluten, grains and reducing dairy and sugars. I have been able to lose weight, regain my health and feel so much better eating this way.
Because I have always loved food, eating and cooking, I’ve developed a lot of easy, healthy meals that will help YOU to flourish by eating real food, whether you have a health concern or not.
In fact so many people who just like to go back to basics and cook real food are loving this book even if they have no food ‘issues’.
I put in the hard work in coming up with fabulous meals, so that you don’t have to. My recipes cover everything from kitchen basics, all meals, snacks and plenty of sweet treats.
