After months of being focussed on the cookbook (have you ordered yours yet? You can do so here) I’ve come out the other side ready to be creative in the kitchen again. So much so that most things I’m cooking Leigh is saying ‘stop the press, we need to add this one! I guess at some point I had to say enough is enough for the cookbook and so now you guys can benefit for free with an increase in posts and free recipes. Maybe they can be stockpiled into What Annabel Cooks Vol 2?! But for now, I hope you enjoy over the next little while a few new and free recipes.
It’s funny how some photos and recipes don’t get much response on social media, and other’s go nuts. Sometimes it’s the time of day they are posted, sweet always gets more feedback than savoury and then there’s the Facebook algorithm that’s way beyond my intellect to try and understand. This one though last night has had about the best response I’ve had, so as promised, here is the recipe.
For an impressive looking (& tasting) tart, this is incredibly quick & easy. Healthy cooking doesn’t have to be hard 😉
Chocolate Mousse Tart with Macadamia Crust
You can use whatever nuts you like really, these are just the ones I had on hand.
- 1 cup Macadamia pieces
- 1/4 cup walnuts
- 1/4 cup pecans
- 1/2 cup shredded coconut
- 1 tbsp coconut oil
- 1 tbsp maple syrup
- Roast nuts in the oven for 10 mins @ 160C/320F. Allow to cool.
- Pulse (all but about 1/2 C mix) in the food processor. Press into 20cm loose base tin. Bake again 10 mins. Cool.
My husband’s parent’s have an avocado farm on the Sunshine Coast in Queensland. I know, I’m very spoilt. I really should utilise them more in my recipes though! I promise you this mousse doesn’t taste at all like avocados and you get all the benefit of the good fats. Combined with raw cacao powder which is high in magnesium, chocolate mousse has never been better for you.
- 2-3 avocados
- 1/2 cup cacao powder
- 2 tbsp maple syrup
- Blitz till smooth in Thermomix, blender or food processor.
- Spread over base and refrigerate. Sprinkle extra nut mix.
- Serve on it’s own, or with cream or ice cream of your choice.
